Gozenshu – Misty Mountain – Junmai Bodaimoto Usu-nigori Sake Hiire
A brother and sister team run this brewery which has been producing sake since 1804. They are pioneers in the use of Omachi rice and using ancient Bodaimoto technique of brewing. the sake that they produce are rich and rustic.
This is a partially unfiltered sake which gives it a cloudy appearance.
It has a sweet and sour flavour profile with fruit flavours and a zingy pepperiness. Being unfiltered it has an earthy chewiness to it.
This sake can be heated to around 35 degrees and pairs well with blue cheeses and peppery or spicy dishes.
