Pommard 1er Cru Jean Javillier
Domaine Jean Javillier & Fils is situated in the picture-perfect village of Meursault in Burgundy’s Cote d’Or. The vineyards have been organically farmed for decades – receiving organic certification in 1971. They have never seen chemicals. Reds and whites alike are harvested in small crates, with whites pressed in an ancient Vaslin mechanical press. Today the estate is run by Alain Javillier who inherited the estate from his father and from whom he inherited the drive for organic conversion.
In the winery, the reds, ferment without temperature control, and only free-run juice is used. Only naturally occuring yeasts are used and the wines are aged in old oak casks for 12-14 months. This is an exquisitely elegant red, dark cherry in colour with scents of black cherry, prune and blackberry. On the palate, round and ripe with hints of chocolate and leather. The tannins are discreet and the finish slightly spicy and lingering. Great with stews, rich sauces and probably perfect with a Sunday roast.
