Boon Framboise
Frank Boon is regarded as the modern day saviour of Lambic beers which are defined by their characteristic tart flavour thanks to the use of wild yeast. The yeasts of the atmosphere descend into open vessels in the brewery and fermentation continues in large wooden casks, the acidity created in these beers creates the perfect base for fruit beers.
Framboise Boon is a combination of old and new lambics matured in oak barrels with the addition of 300g of raspberries and 50g of cherries per litre. Once only available for a few months of the year, the use of frozen raspberries now allows this beer to be available all year round.
Framboise Boon is mild and full bodied with the taste of fresh raspberries. There is no added sugar in this beer and so the characteristic acidic, dry finish of the Lambic balances perfectly with the freshness of the fruit.
